Spiced Rum Apple Cake


1 cup all-purpose flour

1 tsp baking powder

1/2 tsp salt

4 cups apples, peeled, cored & sliced - (1/4 peck of baker's mix will cover you)

2 large eggs

3/4 cup sugar

3 T spiced rum

2 tsp vanilla extract

1/2 cup salted butter, melted

2 T granulated cinnamon sugar for topping


My photo doesn't do this justice - it was DELICIOUS!


Preheat the oven to 350-F. Grease a 9" cake pan with spray butter.


Peel, core and slice the apples. Note: the smaller the apple chunks, the less fragmented your cake will be when you cut it to serve.


In a small bowl, melt 1/2 cup butter and set aside to cool.


In a large bowl, whisk together the flour, baking powder and salt together until well combined.


In another large mixing bowl whisk the eggs and sugar until smooth. Whisk in the vanilla extract and rum until well combined.


Alternating dry ingredients and melted butter, mix in 1/3 of the dry ingredients into the wet, followed by 1/2 of the melted butter. Repeat until all the ingredients are just combined.


Evenly spread the apple rum cake batter into the prepared pan.


Bake the French apple cake for 40-50 minutes or until a toothpick inserted into the center of the cake comes out clean.


Sprinkle the top with the 2 tablespoons of cinnamon sugar for topping.


Cut, serve & enjoy! I will definitely be making this again. I might double the recipe and put it in a 9 x 13 pan so it lasts more than just one night.
